I found an awesome recipe for Baked Apples (by Jill Meredith) in OKMAG.com. I asked my parents if we could make it for Sunday dessert. The recipe recommended using Rome Beauty, Golden Delicious, Granny Smith, or Honeycrisp apples. We used Honeycrisp.
4 large baking apples
4 tbsp. brown sugar
1 tsp. cinnamon
4 tbsp. chopped pecans
4 tbsp. raisins or dried cranberries (I used both.)
1 tbsp. butter
1 c. apple juice
Preheat oven to 375 degrees. Remove most of the apples’ cores with an apple corer, leaving little fruit intact at the bottom of each to hold the filling.
In a small bowl, combine the sugar, cinnamon, pecans and dried fruit. Place apples in an 8 by 8 inch square baking pan. Stuff each apple with the mixture. Top each apple with 1/4 of the butter and add the apple juice to the pan. Bake 30-40 minutes until the apples are tender, but not mushy. Remove from the oven. Spoon the accumulated pan juices over the apples and serve.
They taste sooooo good!
